Here is one of my favourite easy suppers:
Take a clean a large, flat mushroom per person Place in a baking tray or dish Pour a small amount of olive oil over the mushroom and add a knob of butter, and a little pepper Add a dash of soy sauce to each mushroom If you like garlic, put a clove in the tray or dish Cover the bottom of the dish with a small amount of water. (It will 'steam' during cooking and stop the mushroms drying out.) Cover dish or tray with foil and bake for about 10 - 15 minutes in a hot oven until the mushroms are cooked.
Lovely! Serve on hot toast, or with a bed of green salad and pour any liquid from the dish over the mushrooms, discarding the garlic clove if you've used one.

It sounds lovely and all four of us like mushrooms so I could us it as like a light tea in warmer weather.
I will give my mum the recipe as she likes mushrooms as well.
Anymore mushroom recipes please put them on. I usually just add them to a meal or eat them raw. This is my 5 year old daughters favourite way to eat them.

Easy for lunch and not too much washing up either! Also the variations are endless, add a little of this or that and you're off.
