Last night I felt like brightening up my baked potato. I grated cheese for it as usual, but also chopped up a large shallot and cooked it gently in a small non-stick pan with salt and pepper, margarine, grated cheese and a dribble of soy sauce (not too much of any of these things). Plunked it all on top of the baked potato. It brightened it up no end

Sounds mouthwatering! Sometimes the recipes you make up as you go along are the tastiest of the lot.
If you like mushrooms, another nice topping is to chop and fry a few. When they're done, pour some cream over them and stir gently over a low heat until the cream thickens.

It was lovely, thanks - the first time I didn't fry the mushrooms enough, but the next time was better.
