i know there have been a few favourite recipes posted here - i thought i'd better get to it and put a canadian one up. Nanaimo is a small city north of where i am on vancouver island - it was once a mining town. these cookie bars were made for the miners (so i've read) and are known across canada. we took the kids to nanaimo for the weekend (some holiday eh!) and i thought i would share the recipe. if it looks familiar, i'm sure it has a similar recipe from other places - everything in canada has been imported at one time or another!
p.s. they are very very sweet. very yummy, and not that great for losing weight.
THE ORIGINAL NANAIMO BAR
BOTTOM LAYER
1/2 c. butter
1/4 cup sugar (granulated)
5 tbsp. cocoa
1 egg lightly beaten
1 3/4 cup graham wafer crumbs
1/2 cup finely chopped almonds
1 cup shredded coconut (unsweetened)
Melt butter sugar and cocoa in top of a double boiler.(or microwave if in a hurry) Add egg and stir to cook (or microwave for less than a minute) until it begins to thicken. Remove from heat. Stir in crumbs, coconut and nuts. Press firmly into an ungreased 8 X 8 pan.
MIDDLE
1/2 cup butter
2 tbsp. and 2 tsp. cream (or whole milk)
2 tbsp. vanilla custard powder
2 cups powdered icing sugar
Cream butter, cream (or milk), custard powder and icing sugar together well. Beat until light. Spread over bottom layer.
TOP LAYER
4 squares semi-sweet chocolate (1 oz. each)
2 tbsp. butter
Melt chocolate and butter over low heat. Cool slightly. When cool, but still liquid, pour over middle layer and chill in refrigerator.
