A friend gave me a wonderful recipe for lavender cake, it's absolutely scrummy, so if you haven't come across it before, give it a try, guaranteed to up the calorie intake. 8ozs S.R flour 1oz cornflour 2 teaspoons baking powder 9ozs unsalted butter 9ozs caster sugar 4 large eggs 3 heaped teaspoons lavender flowers(preferably Cornish) 3-4 tablespoons milk Mix all ingredients except the milk. Check and add milk until a dropping consistency is reached. Divide between two sandwich tins. Bake for approx 25 mins at 170 c (this is for a fan oven, so you may need to adjust baking times.) Cool, sandwich together with fresh whipped cream. EAT and ENJOY, Yum! ;D

That sounds very rich! My lavender is just about to come into flower too. What size sandwich tins do you use? It sounds twice as much mixture as I'd use for the normal 8" ones.
The current favourite in this house at the moment is stewed fruit at the bottom of a loaf tin topped with sponge cake. In anticipation of a good crop of apples this year I made 2 with the remaining stewed apples I'd frozen. They were finished last week and I'm now on the second of 2 with stewed plums in the base.

Ann, the sandwiches tins need to be 8/9 inches but deep ones not the shallow type. The lavender is dried, I haven't tried fresh. Your stewed fruit loaves sound very good, have you tried the lemon drizzle cake that you make in a loaf tin?

That sounds yummy, Chris. Lavander has very calming properties and I often use lavander oil in a bath or on my pillow to help me relax. I am sure this cake must therefore have advantages to my well-being that would hugely outweigh it's calorific properties...!!
Ann - the stewed fruit cake sounds really good. I can just imagine the caramelly fruit combining with the sponge.
Lemon Drizzle - now that is a particular favourite!
