Anyone else tried them? I was at Cramlington Market yesterday and one of the traders was selling them. I'd never had them before so decided to invest in half a dozen. A friend had told me they were quite rich compared to hen's eggs and when I fried one to have with bacon for my tea, I found she was right and they were a bit too much for my taste. That left me with 5 for which I needed to find a use. Today I made a one duck egg orange sponge! I used 5" foil tins and it worked beautifully. Strange thing is, when I first got this oven and tried sponge making, I got some very poor looking results, to the point where I gave up trying. I'm not sure if the oven has settled down, or if it just likes duck eggs. Course I haven't actually tasted it yet! I still have 4 eggs left - any ideas for them?

the 'one duck egg orange sponge' looks very tasty. i have not tried duck eggs, just roasted duck. what are the shells like? are they dark? very brave of you to try something new. i forget to try new things with the kids. same thing day in day out...

The shells are white or pale blue. The same guy was selling goose eggs and they were even bigger again.

Mark and I love scrambled duck eggs on toast with cream and chives added to the mix, we then put smoked salmon on top ;D it make a great light tea time meal.
They also make a good quice where the other ingredents help tame down the flavour.
We have also tried goose eggs, which are stronger in flavour again to the duck eggs.
We are now waiting for the oppotunity to try an ostritch egg!
