My husband has just been diagnosed as diabetic. The diet is quite easy - basic good healthy stuff we should all eat, but I wonder if anyone has a recipe for cakes that would be suitable for a diabetic diet that's low on the sugar and fat. Thanks in advance. Maria

My Great Aunt was Diabetic and she use to use a good artificial sweetener as a replacement for the sugar. Most people could not tell the difference

Lesley - thanks, I'll give it a google! Cathrin - I have an aversion to the taste of sweeteners, although my husband doesn't mind them. But as he can't eat a whole cake by himself, I've been trying various brands and found one that isn't too bad, so maybe in a cake it'll be masked by the other flavours and I'll enjoy it too. It might even do my waistline a favour! Maria

i have one (somewhere) that uses applesauce as a sweetener - and to keep it moist. sadly i have many recipe books and pages 'ripped out' of magazines. i will find it someday...

Try this one:
Christmas cake or everyday cake
Ingredients 6 ounces brown self-raising flour 2 “ ground almond 1 “ desiccated coconut 2 ” teaspoons mixed spice 2 “ glace cherries 4 “ dates 4 “ apricots 1 pound mixed fruit just over half a pint water 2 tablespoons orange juice
Method Soak the fruit in liquid overnight. Add dry ingredients, mix well. Bake in 2 pound loaf tin(or round) for approx one and a half hours. Gas mark 3 (cover for last half hour). Can use any mixture of dried fruit. If using as a Christmas cake, when cold you can spoon over rum, sherry or brandy on the base of the cake. Wrap in foil, keep in air tight tin .Would probably freeze.

I have several recipies. Not tried any of them, but here goes... These were given to me by the diabetic clinic nurse.
Apple Scones
8oz/225g wholemeal SR flour 1 tsp baking powder (sieve together) 2oz / 50g low fat spread 1 large eating apple peeled & coarsly grated 2 oz / 50g currents 1 tblsp sugar 1/4 pint / 150ml skimmed milk rub fat into flour. Add rest of ingredients. Mix to soft dough with the milk roll out to 3/4 inch, cut with round 2" cutter. Glaze with egg or milk. Bake at 200C/400F or gas 6 for 20 - 25 mins cool on wire rack
Carrot Cake
3oz / 75g sugar 1/4 pint sunflower oil 8oz wholemeal SR Flour 1 tsp baking powder 1 tsp cinnamon 3 eggs, beaten 8oz finely chopped carrot 3 oz chopped mixed nuts
Mix sugar and oil together. Mix in flour & rest of dry ingreds Beat in eggs, add carrots, stir in nuts
Bake in non stick 2 lb loaf tin. Bake for 1 hour 180C /350F /gas 4 Cover after 1/2 hr if cake is browning too quickly
(Might try this myself) freezes well wrapped in foil, it says.
Tropical Tea Bread
4oz/100g margarine 1 oz sugar 2 eggs 1 x 14 oz yin pineapple (drained & chopped) 4oz/ 100g raisins 3 tblsp milk 8 oz / 225g SR wholemeal flour
Mix all together, put into greased 2 lb loaf tin. Bake 325F/160C or gas 3 for 1 - 1.1/2 hr

Thanks Tabitha and Linda. The recipes sound delicious and seem to go with the thing of using fruit to sweeten things up rather than loads of sugar. I will definately try these and let you know how they go. Lesley - thanks for the tip. I could try applesauce in an ordinary cake recipe and see how it goes. Maria

I am diabetic, runs in my family. Splendour is a good sugar substitute for when baking. I cant stand the taste of those cheaper version sweetners, they have a bitter taste to them. I like the oens in the white tub with green ends ( only been using them four years and cant think of waht theyre called!!!!)

Zaffysmum - I hate the taste of sweeteners but he doesn't mind it. Linda - I've been making your apple scones, and very nice they are too! It's something we both like and they are yummy when first out of the oven and still warm. I'll be trying Tabitha's cake this Christmas.
