Can any of you people help. We still await our consignment of furniture, cloths and kitchen equipment to arrive. However I am dying to get going making cakes. The cakes in the shops here leave a lot to be desired. Nothing fancy but I only have a few basic items. Can anyone help with some recipes.
I have one oblong tin. No grease proof paper to be found. Cake flour, bicarb,coco, chocolate chips. eggs etc., There are hardly any cake ingredients in the shops, probably why their cakes are so bad.
The big problem is no scales either. I thought as this was the coffee shop and Bistro there may be some clever folk out there to help.

The little fruit sponges I make are pretty forgiving. For a small oblong tin try 1 egg, 1 tablespoon of sugar, 1 tablespoon of margarine and 2 (fairly generous) tablespoons of flour. Line the bottom of the tin with whatever fruit comes to hand and cover the top with the sponge mix. It takes around 20 minutes at Reg 4.
If it's a big oblong tin, double all the quantities, not sure about the temperature and duration of cooking though.
